Ingredients:Chili Pasta, cooked, 250 grams Canned Tomatoes, 1 can *Peppers, sweet, red, fresh, 1 cup, chopped Smoked Garlic, 4 cloves coarse chopRed Onions, 1/2, sliced*Spanish Olives w/pimento - 15 Olives, halvedAnchovy, 1 largeRed wine vinegar, splashGranulated Sugar, 1 tsp (remove)S&PSmoked paprikaSpinach, frozen, 1 package (10 oz) yields (remove)Reduced Fat Feta Cheese, 8 oz , crumbled
Saute pepper, onions and garlic till soft and fragrent. Add anchovy and gook till nearly dissolved, add tomatos and juice, sugar, and seasonings. Stir will. Add vinegar. Simmer until vinegar is reduced.
Meanwhile, Crumble feta, set aside. cook spinach and drain. Cook pasta and drain.
Mix pasta and tomato sauce. Mix Spinach seasoned with S&P with Feta.
Layer tomatoe pasta, and then spinach. Top with remaining tomato pasta and sprinkle a bit of feta on top.
Cover and bake atr 175c for 30 minutes. Remove cover and backe until brown and bubbly.
