Texas Willie's Sweet Potato Pie

Ingredients
* Sweet potato, cooked, baked in skin, without salt, 2 cup * *Splenda No Calorie Sweetener, .5 cup * *Flour, white, .5 cup * Egg, fresh, 2 large * Nutmeg, ground, .5 tsp * Ginger, ground, .5 tsp * Cinnamon, ground, 1 tsp * Evaporated Milk, Fat Free, canned, 1.5 cup * Baking Powder, 2 tsp * Salt, .5 tsp
Directions
Puree baked sweet potato (after removing skins!) with the canned milk and eggs.

Add splenda, flour, spices, salt and baking powder and mix together.

Pour mixture into a greased 9 inch glass pie plate and bake at 350 degrees for 1 hour or until knife comes out clean.
