Chicken & Roasted red pepper cream sauce with pasta

1-2 chicken breasts - raw, cut into bite sized pieces2 tsp extra virgin olive oil1 tsp lemon pepper1 jar (14 oz) roasted red peppers, blended to a creamy consistency1 cup heavy whipping cream1/4-1/2 cup parmesian1 tsp cajun seasoning1 box mini penne pasta1/2 green onions, sliced thin, raw
In a large stock pot fill with water to boil pasta--add pasta once boiling. In the meantime, in sauce pan, heat olive oil over medium heat. Place chicken into pan and sprinkle with lemon pepper. When chicken is cooked through add roasted red peppers. Simmer, uncovered, for 5 minutes. Stir in heavy whipping cream and cajun seasoning, simmer another 10 minutes. Add 1/4 cup parmesian and stir until melted. Drain pasta and return to pot. Pour in sauce and mix well. Add green onions and stir well. Allow to sit for 10 minutes before serving (this will allow the sauce to thicken and enhance the flavors). Sprinkle with any remaining cheese and serve.
