Manda's Fluffy Pancakes

Ingredients
3 large egg whites1 1/2 cups AP flour (whole wheat would probably work too)1 1/2 cups skim milk1 tbsp vanilla extract (less for good stuff)3/4 tsp salt2 tbsp baking powdersplenda or sugar to taste
Directions
Beat egg whites and vanilla until peaks form (like you would with a meringue). Add milk, mix - should be very foamy. I will sometimes drizzle some Torani syrup in here too.

In a separate bowl, mix your dry ingredients, including sweetener if you want to use it. Gradually beat dry mix into wet mix. You will have a very bubbly batter.

Preheat your griddle or pan (the right pan makes ALL the difference) and spray it with non stick spray. Pour about 1/3 cup batter per pancake - let cook until you see it puffing up and bubbles forming all over - then flip.

Makes 19-20 1/3 cup pancakes. You can adjust the milk if desired to make a thinner pancake.
