Oatmeal Crusted Eggs

Cooking Spray3 Egg Whites1 Egg Yolk1/4 C Quick Oats1 tbsp Pure Maple SyrupSalt & Pepper to taste
1. Spray skillet with cooking spray, heat over medium-high heat.
2. Add eggs
3. Before the Eggs set too much, sprinkle oats over them so they stick to the eggs, Salt & Pepper to taste
4. Flip eggs when ready, after 2-3 minutes
5. Cook additional 2 minutes
6. Remove from skillet and put on plate, oats side up
7. Drizzle Syrup over eggs
For a different kick, substitute Syrup with hot sauce, I really like Tabasco Green Pepper Sauce.
