Date Squares

Ingredients
Date Filling Mixture: 1 lb. dates1 c. hot water (or more if needed)2 tbsp. brown sugar (or more to taste)Crumble Mixture: 1 1/2 c. white flour1 tsp. baking soda1 tsp. salt1 1/2 c. quick oats (dry)1 c. brown sugar1/2 c. hard margarine
Directions
Combine the dates, hot water, and the first amount of brown sugar in a sauce pan. Heat on medium low, stirring constantly, until soft and gooey. Set aside to cool.

In a bowl sift together the flour, baking soda, and salt. To this, add the rolled oats and the second amount of brown sugar, stirring well. Cut in the margarine to resemble coarse crumbs.

Grease a 9x13 inch pan. Lightly press 1/2 of the crumb mixture on the bottom of the pan. Spread the warm date mixture over top. Finish by pouring the remaining crumb mixture on top, and pat lightly.

Bake at 375F for 25 minutes, or until delicately browned. While hot cut into squares. Let cool in pan, and then remove and store in a sealed container.

Makes 24 - aprox. 2 inch squares.
