Pumpkin Squares

1 can Libby's Pumpkin, 15 oz can1/2 cup unsweetened applesauce1/2 cup oil1 cup egg substitute (i.e., Egg Beaters)2 cups Splenda (or mix of sugar)1 tsp baking soda1 tsp baking powder1/2 tsp salt1 tsp cinnamon
Preheat oven to 350 degrees.
Beat together eggs, oil, pumpkin, and sugar (2 Cups).
Stir in remaining ingredients until evenly mixed. Pour into a greased and floured 9x13 inch baking dish.
Bake for 30 minutes or until center springs back when touched.
Frost the pumpkin brownies with cream cheese icing.
Cut into 12 squares. Dessert with no icing is 107 calories of rich moist cake.

I made this receipe not once but twice in the same day. Same results both times. During baking, the sides raised significantly but the middle fell. It looked really doughy. I have a gas oven and allowed extra baking time but was not satisfied with the results. Could this be missing flour? - 11/3/11
