Chicken and Dumplings

Ingredients
1 chicken, boiled in water just to cover, 1 tsp. salt1 can chicken brothCook chicken until tender. Bone and cut into bite size pieces. Skim fat from broth. You may need to add some chicken boullion if your broth does not have enough flavor. Add the chicken back to broth and bring to a boil. Meanwhile, in bowl add 1 1/2 c. while flour, 3 tsp. baking powder and .5 tsp. salt. Mix 3/4 c. milk, 3 Tbsp. olive oil and add to dry ingredients. Stir until moisten. When broth comes to a boil, drop a large tablespoons of dumplings into the broth. Reduce heat to low. Cover tightly. Simmer 12 min. DO NOT remove the lid.You can remove dumplings and thicken the broth but I have not included those calories in this recipe.
