Jodi's no sugar non-dairy pumpkin pie

For crust:1 cup shortening2 cups flour1 tsp salt1 tbsp vinegar1/3 c. soymilkPie filling:1 (15 oz) can pumpkin14 oz vanilla soymilk2 large eggs2 tablespoons cinnamon2 tablespoons organic blue agave nectar1 tablespoon allspice1/2 tsp salt
For crust:
cut shortening into flour and salt. Add vinegar to milk. Combine at once with flour mixture. Makes pastry for 2 crust pie.
For filling;
Heat oven to 425. Whisk pumpkin, vanilla soymilk, eggs, spices and salt in medium bowl until smooth. Pour into crust.
Bake 15 minutes. Reduce oven temp to 350. Bake an additional 35 -40 minutes or until knife comes out clean.Cool.
