Ingredients
6 Medium potatoes, baked (no tinfoil or microwave, the flesh needs to be DRY) scooped out makes about 2.5 cups1/4 cup shredded cheese (I used mexican blend left over from burrito night)2 tbsp whipped cream cheese2 tbsp light sour creamsaltPepper
Directions
Makes 8-9 servings.

Smoosh all ingedients together till well blended. Spray non stcik into muffin tin(s). Fill tins with mixture. Bake till crusty. =)
