Big E's Low Sodium Tomato Sauce

4 cups water1lb ground chicken (turkey or pork - NO beef!)1 medium onion, diced (I like vidalia or yellow)1/4cup minced garlic in olive oil1/4 cup distilled white vinegar1 medium green bell pepper, dicedOregano, ground, 3 tbspBasil, 2 tbsp8 (or so) Tomatoes, diced or crushed - I prefer Roma, but any will do2 cans Tomato Paste (no salt added)2 tbs Crushed Red Pepper1 tsp Splenda1 tsp Tumeric1 tsp Allspice2 tsp Ground Mustard5 packets (0.2mg each) Salt
Makes 12 1/2-cup servings
Freeze one cup of water and crush it. Mix it with one cup of liquid water in a clean glass. Drink it! Now you've had two cups of water for today!!! ;~)
-Mix the minced garlic, diced onion, oil, vinegar, oregano and basil together in a large sauce pan
-Set the burner to Low-Medium
-When the garlic starts to turn dark yellow, add the meat and bell pepper
(Note: this recipe calls for ground chicken, but ground turkey or pork will do just fine. DO NOT USE ground beef!)
-When the meat is properly "browned", add the tomatoes, paste (mostly for color), two cups of water, Splenda, Tumeric, Allspice, and Ground Mustard
-Lower the temperature and wait for simmering (stir occasionally)
-After 10 minutes, taste your sauce; if you are happy with the taste, GREAT! Eat it and enjoy. If you are not satisfied with the no-salt option, add individual packets of salt to the sauce (stirring completely and tasting between each packet) until you are satisfied with the taste. Try not to go over 1000mg of sodium, but if you do be sure to add that to your sodium intake!
Finally, if you would like to add some spice, toss in the crushed red pepper. This will give it a nice (but not overpowering) kick!
