Veggie and Cheddar Fritatta

Ingredients
3 Large Eggs3 egg whites1 C aged cheddar1 Large bell pepper2 C Mushrooms sliced1 C Diced Celery1 C Chopped onions3 cloves garlic minced2 tbsp vegetable oil
Directions
Heat oil in medium frying pan. Whisk together eggs and egg whites and set aside. Grate cheddar and set aside. Saute peppers, cellery, onions and garlic until just beginning to soften over medium high heat (1-2 minutes). Add garlic and mushrooms and continue to saute until mushrooms begin to turn brown. turn down heat to Medium, spread veggies out evenly on bottom of pan. Then pour eggs evenly over veggies - do not stir. cook until eggs become solid - approx 6 minutes. Meanwhile preheat oven broiler. Sprinkle cheddar on top and place pan uncovered under broiler for 2 minutes or however long it takes to melt cheese. Makes 6 servings.
