Teriyaki Tofu fried rice

* Tofu, extra firm, 1 block * Teriyaki Sauce. low sodium 1/2 cup * Uncle Ben's Instant Whole Grain Brown Rice, 2 cup cooked(remove) * egg white, fresh, 2 large (remove) * Mixed Vegetables, frozen, .5 package (10 oz) (remove)
Tofu Prep:
Press and dry tofu.
Cut into bite sized pieces. Put in covered container and marinate in teriyaki sauce.
Heat Peanut oil in skillet.
Toss frozen mixed vegetables until thawed and warm.
Push veggies to side.
Scramble egg whites into bottom of skillet.
Add brown rice until heated.
Add tofu and remaining sauce and toss until heated.
Makes 4 servings.
