Spicy thai noodles

Ingredients
8 oz soba noodles1 13.5 oz can lite coconut milk3 Tbsp tomato paste1 tsp chili powder1 Tbsp chili sauce3 scalions, chopped1 medium zucchini, sliced1 red bell pepper, cut in stripsfresh basil leaves, for garnish
Directions
Cook soba noodles according to instructions on package. Combine coconut milk, tomato paste, chili sauce, and chili powder in sauce pan and bring to boil. Cut heat back and simmer for 2-3 minutes.

Saute zucchini and bell pepper in pan. Add scallions and cook for 1 minute. Pour sauce over vegetable mix. Serve over soba noodles and garnish with basil leaves.
