1 15-ounce can of organic pumpkin1/4 cup brown sugar6 packets of Stevia1/3 cup egg whites(4 large egg whites)1/3 cup unsweetened organic applesauce2 tsp vanilla extract1 9" Whole Foods Organic Whole-Wheat Pie Shell1/4 tsp pumpkin pie spice3 dashes of cinnamon1/8 tsp cloves
First, beat egg whites in bowl on low speed with hand mixer. Add all ingredients and gently beat until mixed well. Pour into pie tin. Bake at 415 degrees F for 15 minutes...then 350 degrees F for 35-40 minutes.
It is important to check on the pie periodically. It is done when an inserted toothpick comes out clean.
