Chicken stir fry in lettuce cups

Ingredients
500 g chicken breast fillet1/2 c grated carrotCorriander (chopped)1 spring onion stalk (chopped)1 clove garlic (chopped)Salt & Pepper1 tbsp peanut oil1 tbsp fish sauce1 tbsp sweet chilli sauce1/2 tsp sesame oillime juice squeezed 2 tbsp honey8 lettuce leaves
Directions
Dice chicken into large pieces and process with garlic, corriander, spring onion, salt and pepper. Add grated carrot & combine. Heat oil in wok and stir fry chicken mixture. Mix sweet chilli sauce, fish sauce, lime juice, sesame oil, soy sauce & honey - taste test. Add combined sauce to chicken mixture and cook through. Serve spoonfuls in lettuce cups immediately.
