Homemade turkey stuffing

1-1/2 loaves wheat bread1/2 stick butter3 sticks celery1/2 c onion1 tsp salt1/2 tsp pepper1 tsp fresh sage2 eggsabout 2 c fresh turkey brothall the turkey giblets
Saute the onion and celery in butter until tender.
Meanwhile, boil the giblets and turkey neck in a stock pot, with A LOT of water.
Tear up bread into small strips. Add egg, salt and pepper, onion mixture. Add enough broth so mixture sticks together. It will be tacky.
Stuff the turkey (both ends- don't forget there's a small cavity at the neck!) and immediately bake the turkey for the required time.
I usually use honeysuckle turkeys and I think it's 325. For a 20 pound turkey, bake approximately 5 hours. Adding the stuffing will increase the cook time.
Use the leftover broth in the stock pot to make turkey pot pie.
