Thanksgiving "stuffing"

2-La Brea Multigrain loaf, cut in 1/2" cubes4 carrots, small dice6-8 young stalks of celery, with leaves, chopped small1 large yellow onion, small dice1 quart chicken broth (or turkey)4-5 pieces of good bacon, chopped1/2 stick buttersalt and herbs to taste
cook the chopped bacon slowly in a heavy pan until the fat renders
saute the carrots, celery, and onion until tender-crisp and season
melt the butter into this mixture
mix veggie mixture into the bread cubes, making sure to get all the "flavor" out of the pan into the bread
mix well
add chicken broth and mix well
spread stuffing into an oven pan and bake for about an hour until the top is crispy and a nice crust has formed on the outside.
