Broccoli Cheeseburger Soup

Ingredients
1 lb. ground beef (I use moose burger)1 c. chopped onion1 c. shredded carrots (or diced, your preference)1 c. diced celery1/4 c. all purpose flour3 c. chicken stock3 c. diced peeled potatoes1 1/2 c. skim milk8 oz.shredded cheddar cheesesalt and pepper to taste
Directions
Set the potatoes and carrots to boiling in the chicken broth. Meanwhile, brown ground beef, onions and celery. When soft, add flour and mix until transluscent. The flour will coat the burger, onion and celery which will help it not to lump when added to the boiling potatoes. Add the hamburger/flour mixture to the boiling potatoes, stirring constantly. Immediatly add the milk.
Add cheese; stir until cheese is melted and blended in. Salt and pepper to taste. Also, adjust thickening and cheese to your personal taste.
