Lowfat One-Egg Waffles

Ingredients

1-1/2 c. unbleached all-purpose flour1-1/2 t. baking powder1/4 t. salt1-3/4 c. 1% milk1 egg, beaten lightly2 T. light margarine, melted
Whisk together dry ingredients.
Add milk slowly, beaten egg and melted margarine.
Beat batter for 2 minutes and drop by spoonfuls onto a well greased hot waffle iron.
Bake until steaming stops.
Remove waffle from iron and keep warm until ready to serve.
Serve with light or sugar-free syrup, low-sugar or sugar-free preserves, or fresh fruit.
One serving equals two 4" square waffles.
