Baked Oatmeal

Ingredients
2 cups oatmeal1/4 cup brown sugar (optional)1 1/2 tsp baking powder1 tsp cinnamon1/2 cup apple -- shredded1 tsp vanilla3/4 cup rice milk -- or soy milk1/2 cup blueberries
Directions
Mix wet ingredients into dry ingredients, add blueberries. Spread into an 8" x8" baking dish sprayed with pan spray. Bake at 350 degrees for 25 - 30 minutes. Cut into six rectangles and serve.
