Zucchini & Feta Fritters

600g zucchini, coarsely grated1 small onion, grated1 garlic clove, grated100g feta2 eggs2 Tbsp each choppyed fresh parsley & mint½ tsp dried mint50g flour30g rice flour1 tsp sumac2 Tbsp olive oil
Place zucchini in a colander, sprinkle with salt and toss. Set over sink for 20 minutes. Squeeze well to remove excess water. Pat dry with paper towel.
Combine zucchini, onion, garlic, feta, eggs and herbs in a bowl. Add flours and sumac and mix with a spoon.
Heat a non-stick frypan coated with olive oil spray over medium-high heat. Add 4 heaped tablespoons of mixture ot the pan and flatten slightly with a fish slice. Cook for 1-2 minutes each side until golden and heated through. Repeat twice more with reamining batter.
Serve the fritters with Turkish brad, labane, tomato wedges and salad
