Salmon & Avocado Salad with Orange Honey Dressing

DRESSING¼ cup each, orange juice & olive oil1 tsp honeySalt & pepper to tasteSALAD200g mesclun salad200g smoke salmon slices2 avocados, sliced1 small red onion, cut into fine rings2 Tbsp capersItalian parsley, to serve
Directions
DRESSING Combine all ingredients in a small bowl and set aside.

Divide the salad mix between 6 serving plates. Arrange the remaining ingredients on top. Drizzle the dressing over each salad and serve immediately.
