Ma Po Tofu

2 Tbsp oil2 green onions4 cloves garlic1 inch ginger root2/3 lb of pork3 Tbsp black bean sauce1 cup of chicken stock16 oz Firm Tofu
Prep:
Peel and grate the ginger.
Slice green onion into rings, discard root portion
Mince the garlic.
Cut tofu into 1/2 inch cubes.
Cooking:
Heat oil in pan. Medium-High heat.
Saute Garlic, Ginger, and Green onions briefly.
Add pork and stir fry until brown and crumbly.
Add bean sauce and stir in.
Add chicken stock and allow to heat.
Add tofu and heat for 5 more minutes.
