Garlic Chicken Kiev

Ingredients
3 tablespoons I Can't Believe It's Not Butter1 tablespoon chopped fresh chives1/8 teaspoon garlic powder6 skinless boneless chicken breast halves (1 1/2 pounds)2 cups cornflakes, crushed (about 1 cup)2 tablespoons chopped fresh parsley1/4 cup low-fat buttermilk or non-fat milk
Directions
Mix spread, chives and garlic powder, shape into rectangle, 3x2 inches. Cover and freeze about 30 minutes or until firm.

Trim fat from chicken. Flatten each chicken breast half to 1/4-inch thickness between waxed paper or plastic wrap.

Heat oven to 425. Spray square pan, 9x9x2 inches, with nonstick cooking spray. Cut chives mixture crosswise into 6 pieces. Place 1 piece on mixture crosswise into 6 pieces. Place 1 piece on center of each chicken breast half. Fold long sides of chicken over chives mixture; fold up ends and secure with toothpick.

Mix cornflakes and parsley. Dip chicken into buttermilk, then lightly and evenly coat with cornflake mixture. Place chicken, seam sides down, in pan. Bake uncovered about 35 minutes or until chicken is no longer pink in center.

    Great basic recipe; I found a way to modify it with lower calorie ingredients (ICBINB light, Kashi "Simply Maize" cereal, Silk almond milk), which allowed me to add in ham and swiss cheese like restaurant Chicken Kiev, and still save calories. - 7/18/13
