Martha Stewart's Kale Slaw with Better than Peanut Dressing

Ingredients
1 bunch kale, chopped and cores removed2 carrots, chopped into coins1 bell pepper, preferably red, yellow, or orange (optional)Dressing: .25 cups canola or vegetable oil2 Tbsp Better than Peanut Butter.25 tsp saltdash hot sauce, if desiredGarnish: .125 cups chopped roasted salted peanuts if desired
Directions
Tear kale into small pieces, removing tough parts of stems, and chop carrots (and optional bell pepper) into coins.

In small bowl, combine oil, cider vinegar, better than peanut butter, and salt. Blend with hand blender to combine. Taste, and add additional agave syrup, salt, or a dash of hot sauce if desired. Pour over salad.

Chop remaining .25 cups peanuts and sprinkle over salad. Serve in an attractive bowl.
