Borscht (Beet Soup)

Ingredients
Directions
2 tsp olive oil1 cup diced onion2 cloves garlic6 cups beef stock3 diced beets1 diced potato1 cup diced carrots1 cup sliced cabbage1 bay leaffresh dilldash of black pepper
Heat olive oil in large stockpot.
Add onions and saute until translucent.
Add garlic and saute another minute.
Add broth, beets, potato, cabbage, bayleaf and pepper.
Bring to a boil and then lower to simmer.
Cook for 30 minutes.
Taste and add any more pepper or salt.
Add diced dill prior to serving.
Great served with a tbsp of fat free sour cream or a whole-wheat roll.
