SPANISH SOFRITO

2 LARGE ONION (YOUR SELECTION)GREEN PEPPER AND RED PEPPER, 2 CUPS.BLACK PEPPER1 CUP CILANTO CHOPPED3 TSP OREGANO5 CLOVES LARGE GARLIC CHOPPED1/2 CUP OLIVE OIL.3 TSP CIDER VINEGAR. 1 CUP OF CELERY CHOPPED2 SMALL HOT PEPPER WITHOUT THE SEEDS.
Rinse out peppers, cilantro,celery..
Step 2-Cut all ingredients into chunks. Note: Remove the seeds from the Green and Red Peppers
Step 3-Add about two tablespoon of olive oil in the blender/food processor. This is to make the blender/food processor easy to puree with all the spices/vegetables.
Step 4-Add all ingredients in the blender or food processor if it doesn’t fit all add in small portions.
Step 5- Puree all the ingredients and then pour in a big mix bowl.
Step 6-Keep repeating step 3 and 4 until you are finish pureeing all ingredients.
Step 7- From the mixing bowl, pour sofrito in plastic containers with lids keep one container in the refrigerator and the rest in your freezer.
you can use this to make soups, rice, any kind of meat.....

Great for the base of some soups and yes sofrito has celery... is a combination of onions, carrots, and celery (either common pascal celery or celeriac). Mirepoix, either raw, roasted or sautéed with butter, is the flavor base for a wide number of dishes … soffritto in Italian, sofrito in Spanish. - 10/4/11
