Coconut Chai Cake

Ingredients
1 c. strong brewed chai tea1/3 c. quick oats (not instant)1 1/2 c. wheat flour1 tsp baking soda1/2 tsp salt1 tsp ground cinnamon1 tsp ground ginger (less for less spicy cake)3/4 c. brown sugar1/3 c. unsweetened applesauce1 tbsp vinegar1 tsp vanilla extract1/2 tsp almond extract1/2 c. flaked unsweetened coconut, 2 tbsp reserved
Directions
1. Brew chai tea ahead of time, steeping two tea bags in 1 c. boiling water until cool.

2. Preheat oven to 350 degrees. Grease 8-inch baking pan.

3. Combine dry ingredients (through sugar). Add applesauce, chai, vinegar, extracts, and all but 2 tbsp of coconut. Mix well and pour into baking pan. Sprinke remaining 2 tbsp of coconut on top.

4. Bake about 25 minutes or until cake is baked through. Serve warm or at room temperature.
