Heart Healthy Chili

Ingredients
Vegetable oil spray1 pound ground turkey1 large onion, chopped2 8-ounce cans no salt added tomato sauce1 1/2 cups water2-4 medium garlic cloves, minced1 15-ounce can pinto beans, rinsed and drained1 15-ounce can kidney beans, rinsed and drained2-3 Tbsp. chili powder1 Tbsp. chopped fresh oregano or 1 Tsp. dried, crumbled1 Tsp. ground cumin1/2 Tsp. salt1/8 Tsp. cayenne, or to tastePepper to taste2 Tbsp. cornstarch1/4 cup cold water
Directions
Heat a large, heavy saucepan or Dutch oven over medium high heat. Remove from the heat and lightly spray with vegetable oil spray. Return the pan to the heat and cook the turkey for 4-5 minutes, or until no longer pink, stirring occasionally. Drain. Set aside. Wipe the skillet with a paper towel.
Heat the saucepan over medium high heat. Remove from the heat and lightly spray with vegetable oil spray. Return the pan to the heat and cook the onions for 2-3 minutes, or until tender.
Stir in the turkey, tomato sauce, 1 1/2 cups water, and garlic. Reduce the heat and simmer, partially covered, for 20 minutes.
Stir in the beans, chili powder, oregano, cumin, salt if desired, cayenne, and pepper. Simmer, partially covered, for 30-40 minutes.
Put the cornstarch in a cup. Add 1/4 cup water, stirring to dissolve. Stir into chili mixture. Cook for 3-4 minutes, or until desired.
