Aunt Bette's Greek Pasta Salad

Ingredients
1 Cucumber, peeled & quartered (seeded, optional)1/2 Red Onion, diced1 Small can black olives, sliced2 C Cherry Tomatoes, halved1 C dry Orzo pasta, cooked1/3 Lemon Juice1/3 Olive Oil1 Package, Reduced Fat Feta CheeseSalt & Pepper, to taste
Directions
1. Prepare 1 cup dry Orzo pasta according to directions. Leave pasta to cool in colander.
2. Mix together cucumbers, onion, tomatoes, olives
3. After pasta is cool, add to vegetable mixture
4. In a measuring cup add lemon juice, olive oil, salt, & pepper. Whisk. Pour over pasta mixture and Stir.
5. Chill and serve.
