Orzo With Chicken, Spinach, Feta, and Tomatoes

Ingredients

4 cups of chicken broth1 tablespoon olive oil1 onion, diced1 teaspoon dried oreganojuice of 1 lemon1 can of diced tomatoes with juice1 lb box of orzo1lb of chicken cubed into about 1 inch pieces8 cups fresh spinach, roughly chopped (I normally just use a big bag of spinach)1/2 cup crumbled feta cheese
Pour the olive oil in to a large skillet or small dutch oven over medium heat.
Add onion and saute until translucent.
Add the can of tomatoes, broth, lemon juice and oregano. Bring to a boil.
Add the orzo and reduce heat to simmer. Cover and cook for 6 minutes, stirring occasionally.
Add the chicken and cook for an additional 6 minutes or until the chicken and pasta are cooked.
Add the spinach and stir until just wilted.
Place in bowls and garnish with the feta cheese.
Serves 6.

I did add - I threw in a tb of minced garlic with the onion, basil and marjoram, fresh ground pepper and a dash of cayenne pepper. Used 1/2lb chicken leftover from cooking a whole chicken the night before, and added in 1 cup sauteed baby portabella mushrooms to substitute the rest of the chicken. - 5/17/10

This was really good & quick. I sauteed the chicken w/the onion & then brought the broth to a boil before adding the orzo. A whole bag of spinach was perfect amt. After cooking the orzo for 8 minutes, I took it off the heat & added the spinach. Sit covered for 5 minutes and stirred in feta. - 4/11/10

This was VERY good! I tweaked it a bit by only using one teaspoon of olive oil and some cooking spray. I also used lower fat Feta cheese, and it was good! I also cooked the chicken before adding it to the pot. I always worry about chicken not cooking enough. This was tasty and very filling! - 1/14/10
