9 lasagna noodles2 cups marinara sauce2 cups cottage cheese3 oz feta cheese5 oz cheddar cheese5 oz fresh spinach, wilted prior to useage.5 cup fresh mushrooms.5 cup fresh broccoli1 red bell pepper, chopped1 egg1/4 t pepper2 cloves garlic1 t basil1 t oregano
Mix together wilted spinach (wilt in a pan with a little EVOO), broccoli pieces, cottage cheese, feta, 3 oz of the cheddar, and the egg with the spices. Lay 3 noodles down in your pan, top with a third of your marinara sauce. Layer half of the cheese mix on top and half of the bell peppers and mushrooms on top of that. Repeat. Top with the remaining 3 lasagna noodles and marinara sauce. Put the remaining cheese on top and cover with foil. Cook at 350 for an hour.
