Whole wheat noodles

3 cups whole wheat flour4-5 large egsdash of salt1 cup white all purpose flour
In a large bowl, add two cups of whole wheat flour, make a well in the middle, add the eggs and salt. Mix until everything is incorporated. Add additional flour until mixture is dry enough to work with. Put 1/2 cup of white flour onto a flat surface. Roll out noodle mixture adding the rest of the whole wheat flour to keep mixture from getting to sticky. Use additional white flour if needed. Let rest for 15 -30 minutes. Roll out a little more... then roll up the noodles like a jelly roll. Cut into 1/2 inch strips. Looses noodle until their are unrolled. Dust with any remaining flour. Spread out onto a flat surface until completely dry. May take up to 24 hours. Store in a ziplock bag or air tight container until ready to use.
To cook, heat 2-3 qts of water to a boil. Add a dash of salt to water. Drop in the noodles, boil for about 5 minutes. May be used fresh, but you need to dry what you do not use.
