Chocolate Covered Rice Cakes

Ingredients
6 rice cakes1/2 cup semi-sweet chocolate chips
Directions
Melt the chocolate chips in a double boiler, or in the microwave just until melted and smooth, try 30 seconds at a time, then stir (if you microwave too long the chocolate will seize up.)

Dip the cakes in the melted chocolate and place chocolate-side up on wax paper. Put in fridge to harden if you like or eat as is!

Store in individual sandwich zipper bags for freshness after the chocolate has hardened.

*The melted chocolate can be spread on the cakes with a rubber spatula rather than dipping if you prefer.
