Ingredients
16 oz. lean beef2 cups tomato, diced1 cup clery, chopped1/2 cup green onion, chopped1 cup green pepper, chopped2 garlic cloves, mincedblack peppercayene pepper3 cups spinach leaves8 oz. 1% cottage cheese4 oz. mozzarella, grated*10 oz. tofu(med.Firm) can be substituted for 8 oz. lean beef
Directions
Brown beef
Add tomatoe, celery, onion and green pepper.
Season sauce to taste with garlic, pepper and cayenne, and let simmer.
Wash spinach.
Layer sauce, pinach, cottage cheese.
Top with cheese and bake for l hour. Serves 4.
