Turkey Sausage and Pear Stuffing

3 tsp extra virgin olive oil1 loaf (3/4 pound) whole grain bread, cubed (4 cups)1 pound sweet italian turkey sausage1/2 cup low sodium chicken broth1 medium onion, chopped4 celery stalks, chopped1 Bosc (anjou/Bartlett) pear, coarsely chopped1 tbsp fresh sage, chopped1/4 cup fresh parsley, chopped1 egg, lightly beaten1/4 tsp salt1/4 tsp ground black pepper
lightly oil a 9/13 pan. Preheat oven to 350.
Place bread cubes in a larg bowl. Remove sausage from casing and break into 1/2" pieces. Heat 1 tsp olive oil in large skillet. Add sausage and cook until browned (about 3 min). Add to breadcrumbs.
Return fry pan to heat, add 2 Tbsp broth, scrape browned bits. Add 2 tsp olive oil, celery and onion. Cook until softened (about 6 min). Add pear and sage; cook 2 more minutes. Transfer to bread crumb/sausage mixture.
Add egg; stir to combine. Add remaining broth, parsley, salt and pepper. Mix well.
Spread evenly in baking dish. Bake until crusty and heated through, about 30 minutes.
