California Chicken Sandwiches

Citrus Mayonnaise: 1/3 cup fat-free mayonnaise 2 Tblsp thawed orange juice concentrate 1 tsp lime juice 1/2 tsp ground cumin 1/8 tsp hot sauceSandwiches: 4 (4 oz) skinless, boneless chicken breast halves 1/4 tsp salt 1/8 tsp black pepper 8 slices of bread (any type you like) 16 spinach leaves 2 plum tomatoes 1 peeled avocado
1. To make mayonnaise, combine first 5 ingredients in a small bowl.
2. To prepare sandwiches, sprinkle chicken with salt and pepper and cook until done. When done cut diagonally into thin slices.
3. Spread citrus mayonnaise on bread top with a chicken breast, 2 tomato slices, 2 avocado wedges, 4 spinach leaves, and finally the last slice of bread.
4. Enjoy!!!
