Low-Fat Fudge Brownies with added fiber

Ingredients
1 box fudge brownie mix1 large egg2 Medium carrots washed and unpeeled finely grated2 containers stage 1 prune baby food1/4 to a 1/3 C. water1/4 C. chopped walnutscooking spray
Directions
Combine all ingredients except water.Add just enough water to mix completely.

Hint: I use my cheese grater for the carrots.

Lightly spray a 8x8 pan with cooking spray pour into pan and bake at 350 for 38 to 40 minutes.

Allow to cool and cut into 16 squares
