Creamy Potato Soup (Dairy-free)

Ingredients
1 Tbsp. Butter1 Tbsp. Minced Garlic1 Small Onion, minced6 Medium Russet Potatoes, chopped2 Cups Chicken Broth6 Strips 95% Fat Free Turkey Bacon Cooked & Crumbled 1 Can 98% Fat Free Cream of Chicken Soup (10.75 oz)4 Cups Plain, Unsweetened Soy Milk Salt to tastePepper to taste
Directions
1. Melt the butter in a stock pot and add the onions and garlic, saute for about 2 minutes over medium heat
2. Add the potatoes, let cook for about 20 minutes or until soft, stirring occasionally, over medium heat
3. Add the crumbled turkey bacon
4. Mash some of the potatoes with a potato masher & add the cream of chicken soup, stir
5. Turn the heat down to low and add the soy milk, allow the soup to get thoroughly hot again, then it's ready

Great served with crusty bread! (not included in the nutrition info)

    I haven't tried this recipe yet, but I know I will need to make substitutions. Both butter and and cream of soups contain milk. - 9/25/11
