Dairy Free Red Fat & Sugar Free Corn Muffins

Ingredients
1/2 C Unbleached Flour1/2 C White Whole Wheat Flour4 t baking powder3/4 t salt1 C Yellow Cornmeal2 Eggs1 C Almond Breeze, Unsweetened Original1/4 C Light Smart Balance Margarine
Directions
Stir flours, sugar, baking pwd & salt together. Stir in cornmeal. Add remaining ingredients and either beat with electric beater or by hand until just blended. Divide into 12 lined muffin tins and bake in Convection oven at 375 or regular oven at 400 for 15 - 18 min or until light golden brown.
