Gluten Free, Nut Free Banana Bread

Ingredients
1/3 c olive oil1/3 c Brown Sugar2 large eggs1 TBS molassestsp vanilla1 1/4 c Bob's Red Mills Gluten Free Flour1/2 c Buckwheat flour (optional. Can use all Bob's RM GF AP Flour, if desired.)2 tsp baking powder1 1/4 tsp cinnamon1/2 tsp cloves1/2 tsp pumpkin spices1/2 tsp nutmeg tsp xanthan gum1 1/2 c banana. (about 3 medium)
Directions
Preheat oven to 350 degrees
Mix all wet ingredients. Add dry. ingredients. Put into greased pan. Bake for 1 hour.
If making muffins, spoon into 12 muffin tins.

Makes 12 servings.

    This matches the Gluten Free Banana bread recipe I concocted using Bob's Red Mill and my mother's old Banana Bread recipe. Just never put in Cinnamon before. - 8/29/10
