Ingredients
meatballs-1 lb. lean ground turkey2 large eggs1/2 c. long grain white rice1 tsp garlic powder or 1 clove minced garlic1 tsp onion powder or 1/2 small onion mincedsalt and pepper to tasteany other seasonings you may likesoup-meatballs4-6 small to medium potatoes cut into large chunks1lb. baby carrots2 green bell peppers sliced into stripsany other veggies you may like2 cans diced tomatoes with chiles2 pkgs(16 cubes) knorr tomato bouillon water
Directions
makes about 15 12 0z. servings
in a 9 qt. pot, fill about 1/2 way with water and tomato bouillon and boil.
mix all ingredients for meatballs in mixing bowl.
roll meatballs into 1/2 inch balls.
place meat balls along with all other ingredients into boiling water.
heat on medium heat for about an hour.
serve hot.
