Balsamic Parmesan Roasted Cauliflower

Ingredients
1 head cauliflower, cut into florets1 T. extra virgin olive oil1 t. dried thyme1/2 tsp. dried rosemaryred pepper flakes, to tastesalt and pepper, to taste2 T. Balsamic vinegar1 oz. shredded or grated parmesan cheese
Directions
Preheat oven to 450 degrees.

Mix cauliflower florets, extra-virgin olive oil, thyme, rosemary. red pepper flakes, salt and pepper in a large baking dish or sheet, spreading cauliflower in a single layer. Roast for 15-20 minutes until cauliflower starts to soften and begins to brown on the bottom.

Toss the cauliflower with vinegar and sprinkle with cheese. Return to the oven and roast until the cheese is melted and any moisture has evaporated, 5 to 10 minutes more.

Makes 4 servings.
