Chocolate Flax Snack Cake

Ingredients
300g (1-1/2 cups) sugar60g (3/4 cup) unsweetened cocoa powder90g (3/4 cup) whole wheat flour30g (1/3 cup) ground flax seed73g (2/3 cup) oat bran1-1/2 tsp. baking powder1-1/2 tsp. baking soda1 tsp. salt2 eggs1-1/3 cups buttermilk2 T. oil2 tsp. vanilla1 cup boiling water
Directions
Preheat oven to 350. Spray 9"x13" baking pan with non-stick spray. In a large bowl, combine dry ingredients. In another bowl, whisk together buttermilk, eggs, oil and vanilla. Stir into dry ingredients until mixed. Add boiling water and stir until combined. Pour into prepared pan and bake for about 35 minutes. Makes 12 servings.

    This cake is awesome. I loved it as is, but actually made it with 1/4 c. of unsweetened applesauce in lieu of the oil and also added 1/3 c. protein powder. It is excellent. Has become a staple in my kitchen - 10/16/08

    This is a DELICIOUS cake! Makes a perfect breakfast, or even a desert! A spoon or two of milk over it is all you need to bring out the sweetness! It's a lot for 1 person, so i gave some away. Next time I'll probably half the recipe. I would definitely recommend this one! - 11/4/08
