Ed's Beef Barley and Mushroom Soup

Ingredients
2 Tbs Olive Oil1 medium onion, chopped medium2 carrots, chopped medium1 tsp thyme1 can 14.5 oz, Diced Tomato with Basil, Garlic & Oregano2 quarts beef broth1/2 cup pearled barley1 lbs lean beef cut inti bite size pieces1/4 cup diced fresh dill16 oz sliced mushrooms
Directions
Serves 12

Saute in 1 Tbs olive oil the onions and caarrots until soft over medium heat about 5 minutes. Add 1 more Tbs olive oil and the mushrooms and cook until soft and the liquid they throw off evaporates, 4 to 5 minutes. Add the thyme, tomatoes, broth, meat, and pearl. barley. Bring to a boil, reduce the heat , and simmer until the vegetables and the barley are tender, about 45 minutes. Serve and sprinkle with diced fresh dill.
