Ingredients
150 g flour3 eggs250 ml milk30 g powdered sugar70 g butter (or oil)40 g raisins2 dashes of salt
Directions
make 4 servings
Mix flour, salt, egg yokes and enough cold milk to make a thin batter. Whip egg whites, then add powdered sugar and whip more. Gently mix into batter. Add raisings (or other dried cherries).
In a medium hot pan (non stick is best) melt 1/2 the butter (or oil) and slowly bake 1/2 the mixture until golden brown on the underside, flip and bake to golden brown color. Rip cake with forks into bite sized pieces and keep warm. Repeat with remaining batter.
Serve dusted with powdered sugar.
Side disches: Apple sauce, plum sauce, pear halves etc.

    I make this recipe too, and I love it as a breakfast, especially as part of a lunch. I sprinkly icing sugar on top. To cut it into pieces, I usually just break it in the pan with the spatula. - 4/27/10
