Ingredients
~1 lb lean ground beef~1 chopped onion~ 1/2 bell pepper, chopped~2 carrots, sliced~6 c. beef broth (low sodium is better)~1 Tbsp chili powder~1 tsp cumin~1/2 tsp oregano~1 tsp Worcestershire sauce~1 can diced tomatoes~1 and 1/2 cup elbow macaroni (I used Whole Wheat)~Salt to taste, Tabasco to taste
Directions
Brown the beef in a soup pot. Drain the extra fat.

Add the onions, pepper and carrots and saute until transparent.

Add the herbs, tomatoes and worcestershire sauce, then the broth and bring to a boil. Reduce the heat to a simmer, cover, and cook for 10-15 min.

Raise the heat to a boil again, add the macaroni, and cook until the pasta is tender.

Add salt if desired -- I think the beef broth gives enough salt though! If you're into spicy, spike the soup with a teaspoon of Tabasco sauce, or let folks garnish their own.

Makes 8 servings. Serve with a crusty roll for a perfect, hearty meal.
