Japanese Chicken Salad

Ingredients
2 tbsp olive oil1 - 3 oz package Ramen noodles soup mix2 tbsp sesame seeds1/2 cup sliced almonds2 to 3 cups diced or shredded cooked chicken breast4 cups shredded green cabbage1/2 cup chopped green onionssaltRice Vinegar Dressing (recipe follows)
Directions
Heat 2 tbsp oil in wide frying pan over medium-high heat. Crumble ramen noodles (do not use seasoning); add to oil with almonds and sesame seeds. Cook, stirring until brown (3-4 min). Drain on paper towl. In large boal, combine noodle mixture with cabbage, green onion, and chicken; season with salt to taste. Prepare rice vinegar dressing and pour over salad. Mix lightly until well coated. Makes 6-8 servings.

Rice Vinegar Dressing: Mix 1/3 cup olive oil, 1/3 cup rice or white vinegar, 5 tsp sugar, and 1/2 tsp black pepper.
