Chicken Scalopini

Ingredients
Chicken Breast, no skin, 9 ozBread crumbs, dry, grated, plain, 1/5 cupLemon juice, 1/8 cupCountry Crock Light, 1 TbspHealthy Harvest Pasta, Rotini, 6 oz Classico Red Pepper Pasta Sauce, 1 cupCooking Spray
Directions
Pound each chicken breast half to 1/4-inch thick with meat mallet or rolling pin. (I put them between 2 sheets of plastic wrap first).

Brush chicken with juice and sprinkle with salt and pepper.

Dredge chicken in breadcrumbs.

Heat a large nonstick skillet to medium-high heat and coat with cooking spray.

Add chicken and cook for 3 minutes or so on each side until chicken is done.

Remove from pan and keep warm.

Serve over whole wheat pasta with a light drizzle of tomato sauce.
